Air Fryer Tomato and Pesto Puff Hearts
Pastry puffs beautifully in the air fryer. Put this fact to good use by making these quick tarts for your dinner or lunch.
The potential of ready-rolled puff pastry
It’s a crispy, flaky base that can be topped with an endless array of toppings. Caramelised onion chutney and Brie? Parma ham and mozzarella? Have a browse in your fridge for more inspired combinations.
Tip: brush the rack with neutral oil before adding your tarts to cook.
Using the leftovers
When you’ve made these, you’ll have puff pastry left. Wrap it tightly and keep it for another day or another recipe – you could try our air fryer Leek and Cheese Rolls.
Air Fryer Tomato & Pesto Tarts
Serves 1-2
Half a pack of ready-made puff pastry
2-4tsp green pesto
4-5 cherry tomatoes
ALTERNATIVE TOPPINGS:
Caramelised onion chutney & diced Brie; Softened goats’ cheese, sliced tomatoes and basil; Diced peach and Brie.
1 – Unroll the puff pastry and cut tarts using your favourite cookie cutter.
2 – Put 1-2 tsp of pesto on each tart, leaving a margin around the edge
3 – Add the halved cherry tomatoes on top.
4 – Put the crisping rack into the Clear Mini Glass Air Fryer. Place two tarts on the rack and air fry at 180°C for 9 minutes. (Cook in batches.)
5 – Cool slightly before serving.
