Air Fryer Cheese and Leek rolls
Ready-rolled puff pastry is our new obsession. It works a dream in the Clear Mini air fryer, where it puffs and turns satisfyingly golden brown in under 10 minutes.
Air fryer pastry rolls
If a cheese and potato pasty is your go-to, you’ll love these cheese and leek mini rolls. They’re shaped just like sausage rolls and make great party food!
You can also use this recipe to make a Cheese & Leek classic pasty: just cut circles of pastry and add filling to one half before brushing the edges with egg and pinching to seal them in a semi-circle shape. You’ll only be able to cook one or two at a time, but they can be frozen to cook another day – great for batch prep.
Air Fryer Cheese and Leek Rolls
Makes 24 – Uncooked pastry rolls can be frozen.
1 small onion
2 leeks
3-4 medium-small potatoes
100ml vegetable stock
1/2 tsp salt
1 tsp wholegrain mustard
1 cup grated cheddar
320g (1 pack) ready-rolled puff pastry
1 egg, beaten
1 – Finely chop the onion. Clean and finely slice the leeks. Peel and dice the potatoes into 1cm pieces.
2 – Add the olive oil to a pan over a med-low heat and soften the onion and leek.
3 – Add the potatoes and stir for a minute before tipping in ½ cup of vegetable stock. Simmer, partly covered, for 10 minutes, stirring frequently to prevent sticking. You want tender potatoes and barely any liquid left at the end. Leave in the pan for a few minutes to steam dry.
4 - Add the salt, mustard and cheese and mix well. Cool the filling in a bowl.
5 – Unroll the pastry and cut it vertically into three rectangular pieces.
6 – Spoon filling down the middle of each piece and brush both long edges with beaten egg. Fold in one side, then the other, pressing to seal. They now look like long sausage rolls.
7 – Cut into 7cm pieces and arrange on baking paper on top of the crisper rack. Brush the tops with egg for a golden finish. (You’ll have to cook them in batches, or freeze some for another day.)
8 – Cook at 200°C for 10-13 minutes. The pastry should be puffed and golden.
Serving suggestions
Puff pastry, how do we love you? Let us count the ways.
- 🍴 For a simple but very stylish bake, cut strips of puff pastry (about 3cm) and spread them with chocolate spread, grated cheese, or nut butter, then twist and air fry. Don’t get us started on the ones we made with pistachio crème…
- 🍴 Create your own puff pastry tart with almost any combination of fillings. Cut a 12 cm circle and be imaginative with your ingredients. We like green pesto, chunks of roasted squash, and feta, all seasoned well. Bake for around 10-14 minutes or until the pastry is risen and golden.
- 🍴 Make our first love: sausage rolls. They’re so easy and great for children to make – just squeeze the meat out of a sausage and wrap it in puff pastry. Cut into bite-sized pieces, brush with egg and air fry!
- 🍴 Make a veggie or vegan sausage roll using plant-based sausages such as Linda McCartney’s. Squash them in a bowl (we like adding a teaspoon of tomato puree) and use to fill the puff pastry rolls, as above.
