Air Fryer Spring Rolls

Disclaimer: they’re not even 10% authentic. But they ARE far more delicious than you think they’re going to be.

Spring roll wrappers are hard to come by (read: the groceries van won’t usually bring them), so get yourself a box of filo pastry and make them this way. Did you know that filo pastry is made with almost no fat?

WHICH IS ANOTHER GREAT REASON TO MAKE THESE.

We picked a high-fibre veggie filling for our spring rolls. You can use the recipe as a blueprint – swap a carrot for sweet potato or add some rogue beansprouts. Make it your own way.

Can you air fry spring rolls?

Not everything works in the air fryer. That’s why we test recipes in our kitchen (using the gen 2 Clear Mini Glass Air Fryer) before publishing them on our blog or social media. 

To get your pastry properly crispy in an air fryer, it needs air circulating all around it. So your air fryer is best for individual pastry snacks – like spring rolls, mini tarts and sausage rolls. (We haven’t managed to crack the air fryer quiche yet… but you know we’ll report here when we do!)

Filo pastry cooks quickly in an air fryer, so you’ll just need to ensure that your filling is cooked enough before assembling the spring rolls.

Serving suggestions

-           🍴 Picky tea? You could rustle up some party bhajis and potato wedges as well.

-          🍴  Dipping sauce is essential: we had some @chubbydumplinguk sauce – you could use sweet chilli or sriracha if you can handle the heat.

 

Air Fryer Spring Rolls

Serves 1-2

1 small onion, finely sliced
1 large carrot, grated
1 small or ½ large courgette, grated
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 box filo pastry
Olive oil, to brush

1 – Warm a dribble of olive oil in a small pan and soften the onion, carrot and courgette for 5 minutes over a low heat.  

2 – Raise the heat and add the soy sauce and vinegar, stirring to evaporate. Set aside to cool.  

3 – Remove one sheet of the filo pastry, fold it in half and then cut in half to give two folded rectangles.  Add 1 tsp of cooled filling to each and roll up tightly, tucking in the ends. Brush lightly with oil. 

4 – Put the crisping rack into the Clear Mini Glass Air Fryer.  Place 4-5 spring rolls on the rack and cook at 180°C for 4-5 minutes.

5 – Cool for a few minutes before serving with dipping sauce.
