Air Fryer Crispy Caribbean Tofu
If you want to pack some extra protein into your plant-based lunch, make this crispy, spicy tofu in your Clear Mini Glass Air Fryer. It’s great with harissa vegan mayo or hummous and a dribble of sriracha (to really clear the sinuses).
Give it a squeeze
To make your tofu EXTRA tender, parboil it for 3-4 minutes in salted water. This removes moisture and also helps the tofu to soak up that marinade like a sponge!
You could use any spice blend in this marinade – Mexican Fajita or Indian Tikka would be good choices too! The maple syrup adds just a little sweetness to balance the acidity.
Air Fryer Crispy Caribbean Tofu
Serves 2
1 block pressed (firm) tofu, drained
Marinade:
Juice of ½ a lime
2-3 tsp Caribbean Jerk seasoning
1 tbsp olive oil
1 tbsp maple syrup
Quick Pickled Onions:
½ red onion, finely diced
Juice of ½ a lime
½ tsp caster sugar
Pinch of sea salt
To serve:
Flatbread, vegan mayo, sriracha, salad or coriander leaves.
1 – Chop (or rip) the tofu into 1” pieces.
2 – Parboil them in salted water for 3 minutes, drain, and leave to steam dry while you make the marinade.
3 - Mix lime juice, seasoning, olive oil and maple syrup in a bowl. Add the drained tofu and mix gently. Leave to marinade if possible for 20 mins up to 3 hours, covered.
4 – Put the rack into the Clear Mini and add the tofu. Air fry at 200 degrees C for 15-17 minutes, tossing halfway through.
5 – Meanwhile, make the quick pickled onion by dicing the red onion and mixing it with the lime juice, salt and sugar. Set aside.
6 – Spread a flatbread with vegan mayo and top with the tofu, pickled onions, sriracha, and extras!
