Luxury Salted Chocolate Puddings

It will seem like you’ve done it wrong. These puddings start with regular cake batter which has watery cocoa tipped over the top. Then there’s a little magic! Watch your pudding puff up in the mini glass air fryer. 11 minutes later, stick in your spoon and find the puddle of chocolate sauce at the bottom.

Luxury Chocolate Puddings (makes 4)

60g unsalted butter

40ml milk

60g soft brown sugar

1tsp vanilla extract

1 egg

80g plain flour

1½ tsp baking powder

½ tsp sea salt

3tsp cocoa powder

Sauce:
2tsp cocoa powder
60g sugar
80ml boiled water

You’ll also need 4x 200ml ramekins.

1 - First, cut up the butter and put it into one of the ramekins. Place inside the air fryer and melt (80°C for about 3 minutes worked for us).

2 – In a bowl, mix the milk, 60g sugar, vanilla and egg. Add the melted butter and whisk together.

3 – Weigh out the flour and sift it into the bowl with the cocoa and baking powder. Add the sea salt and mix until smooth.

4 – In a cup, mix the 2tsp cocoa, 60g sugar, and 80ml boiled water.

5 – Share the batter between the ramekins. Place one into the airfryer drawer and gently pour over enough of the liquid to come almost to the top.

6 – Bake at 180°C for 11 minutes. Cool slightly before eating.
