Air Fryer Roasted Tomato Soup

Hold the phone! We just made the most delicious autumn soup using the Clear Mini glass air fryer.

Soup isn’t the first thing that comes to mind when you buy an air fryer. But wouldn’t it be nice to make a small batch next time you’re working from home -  or on a weekend, probably with a cheese toastie on the side? (Make that in your air fryer too. It comes out so crispy.)  

Plus, if you’re anything like us, you don’t always WANT a giant batch of soup that demands to be eaten every day for what feels like the rest of time.

So, if you have tomatoes in the fridge and a chill in the air, this rich and rustic soup is the recipe you need. It’s full of fibre and flu-fighting Vitamin C. You could even pour it into a thermos and take it with you on a dog walk.

Your air fryer roasting vegetables

… and happily, roasted veggies make the perfect starting point for delicious soup. (But if you’re not in a soup mood… have you seen our perfect roast potatoes, or roasted butternut squash rigatoni? )

We think that once you start using your air fryer in this way, it’ll come in handy for lots of recipes which ask you to switch on the oven for just one ingredient.

Air fryer croutons send your soup over the edge

Do you have the end of a baguette languishing in your kitchen?  This is the perfect way to use it. Egg white forms a crunchy coating while the inside of each crouton steams and becomes fluffy. These posh croutons are just a bit magical:

60g stale bread, cut into 1.5cm cubes
1 egg white
Seasoning: use salt and pepper or try a blend like Wild Herb Sea Salt!

In a roomy bowl, whisk the egg white until the surface is covered in bubbles. Add the cubed bread and keep turning it until the egg white has been fully absorbed. Sprinkle with seasoning and mix again.

Spray your crisper rack with a little oil and add the croutons in a single layer. Air fry at 200°C for 6-7 minutes and cool a little before serving on top of your soup!

Air Fryer Roasted Tomato Soup

Serves 1-2

250g tomatoes
1 small red onion
1 tsp olive oil
1 tsp tomato puree
1 tsp vegan stock powder (we used Marigold)
½ tsp sugar (optional)
200-300ml boiling water
To garnish: 1 tbsp pesto or 60ml single cream (optional)

1 – Halve the tomatoes and red onion. Drizzle with the olive oil and place onto the crisper rack in the glass drawer of your Clear Mini.

2 – Roast for 13-15 minutes at 180°C.   

3 – Boil your kettle and get out your blender (a stick blender works!).

4 – Tip the roasted vegetables into a blender jug with the tomato puree, vegan stock, sugar, and enough water to reach soup consistency.

5 – Blend together, adding more water if required.  Serve with pesto or cream and croutons on top.
