Air Fryer Doritos Chicken

Time-pressured mums have long been using cornflakes to make quick chicken nuggets. But there’s a new ingredient sweeping the socials – Doritos!

We were intrigued. So we’ve tested the trend in our test kitchen, using the Clear Mini glass air fryer to cook our crispy-coated chicken. The verdict?   

Choose your glue

You’re going to need to stick on those Doritos somehow. So we tested two different approaches:

-            Buttermilk/yoghurt marinade. Pro: tenderises the chicken and can be left to marinade in the fridge until you’re ready to cook. Con: The cornflake/Dorito coating fell off slightly during cooking. On balance, this method was our favourite!

-            Dip in flour, then into egg. Pro: this classic method gives a strong coating and all the crumbs stick on well. Con: There’s less flavour, which our testers noticed.

Choose your Doritos flavour

Chilli Doritos were a hit in the test kitchen – we also tested with cheese Doritos and you could definitely use the cool salted flavour too. To make our Doritos pack go further, we added cornflakes – the amounts below coated 3 chicken breasts, chopped into small pieces.

Serving suggestions

-        🍴    Roll up in a flatbread with lettuce and nacho cheese sauce.

-          🍴  Serve with our Ultimate potato wedges.

Air Fryer Doritos Chicken

Serves 2-3

3 chicken breasts, cut into 2-3” pieces
150ml buttermilk (or use 50ml yoghurt with 100ml milk)
1 tbsp chicken seasoning blend
100g Doritos
30g cornflakes

1 – Mix the buttermilk (or yoghurt and milk) in a small bowl that can hold the chicken, and stir in the seasoning. Add 1tsp salt if your blend doesn’t contain salt. Add the chicken, mix well, and cover.

2 – Leave the chicken to marinade for a couple of hours, or overnight if possible.

3 –Put the Doritos and cornflakes into a bowl or a bag and crush with a rolling pin, or blitz in a food processor. Tip the fine crumbs into a wide bowl.

4 – Lift each chicken piece from the marinade and press it into the crumb mix, patting the coating all over. Place onto a lined baking tray or plate.

5 – If using the Clear Mini, it’s best to cook in batches: place 4-6 pieces on the crisping rack and fry at 180°C for 15-18 minutes.

6 – Check the chicken is cooked through or use a thermometer at the thickest point (it will read 74° when safely cooked).       

7 – Cool slightly before serving to the starving hordes.  Or yourself. Enjoy!
