Air Fryer Squash & Harissa Soup
You know that butternut squash languishing on your windowsill … or in the bottom of your fridge? Time to bring it justice. Turn it into a bowl of bright orange joy – our harissa-spiked recipe is SOUPER easy to make in your air fryer.
Roast vegetables, make better soup
There are two ways to make a good soup base: one, sauté your vegetables in a pan with a little oil, a little salt, and a lid, using a low heat and plenty of patience. Or two – roast them in your air fryer and skip the long waiting time!
We ❤️ harissa seasoning
It’s from the air fryer spice bundle created by our friends at Seasoned Pioneers. It’s warm with coriander and spicy with chilli seeds! It can be muddled with olive oil to make a drizzle or marinade – here, we just dusted it over our squash chunks before roasting, then added extra to serve.

If you find yourself staring in the fridge at lunch time, could we suggest making this soup? It’s fast, warming, and full of fibre from the fabulous butternut squash.
Air Fryer Squash Soup with Honey and Harissa
Serves 1
200-300g squash (about half a small butternut), peeled and chopped
1 tsp harissa seasoning
Olive oil spray
1 small onion, chopped
½ tbsp honey
½ tbsp tomato puree
200ml vegetable stock
Salt and pepper, if needed
1 extra tsp Harissa seasoning, to serve
1 – Chop the squash, toss with oil and seasoning, and spread out on the crisper rack in your Clear Mini air fryer.
2 – Cook at 180°C for 10 minutes, then open the drawer and add the chopped onion. Cook for another 6-7 minutes, until all the vegetables are tender.
3 – Put the vegetables into a blending jug with the stock, honey and tomato puree, and blend until smooth. Add a splash more water if it’s too thick.
4 – Taste for seasoning and pour into a bowl.
5 – Drizzle with olive oil and sprinkle with harissa.
