Bored with breakfast?  The honey roasted peach is ready to become your new obsession.

Trying to avoid the refined sugars calling from the biscuit tin, but getting bored between Zoom calls, we had the idea to put a peach in the air fryer.  It cooks in minutes in your ClearFry and just look how pretty it is. Dress it up with seeds, granola, or edible petals and take a picture for your social media. We think this is the perfect WFH brunch dish.

Cream, yoghurt, or vegan yoghurt all work as the backdrop to these sticky, soft and dreamy summer peaches (or nectarines).  It can be free from refined sugar, dairy, and gluten – just pick your accompaniments accordingly.

1 peach, halved
2tsp honey
To serve:
Extra honey
2tbsp plain yoghurt (choose vegan or dairy-free if preferred)
Optional extras: granola, flaked almonds, or mixed seeds.
We also added some edible petals.

Cut a 10cm circle of baking paper and place on the air fryer rack. Cut your peach or nectarine in half – if the stone isn’t coming out, it might be easier to remove it after cooking. Place the halves, cut sides up, on the baking paper. Drizzle half a teaspoon of honey over each one.

Bake for 6-8 minutes at 180°C.

Leave to cool for another 2 minutes before serving with yoghurt, cream, ice-cream and optional extras - granola, seeds, or flaked almonds.
